PREP TIME: 15 Minutes

Using applesauce to replace the butter, eggs and oil, the brownie mix is moist and heavy resulting in a tasty alternative to traditional brownies or chocolate cake.

Top with Low-Fat Cool Whip to compliment the moist taste.

  • These recipes contain fat-free, nearly fat-free, and other ingredients that through trial and error I found do not aggravate my pancreas and cause pancreatitis flair-ups.

  • My primary concern is eliminating all butter & all oils and minimize egg consumption. If I can cook using a sugar substitute, then even better.

Dry Ingredients

  • 1 ½ Cups all-purpose flour

  • 1 Cup Splenda Baking Sweetener

  • ¼ Cup cocoa powder

  • 1 Tsp Baking Soda

  • ½ Tsp Salt

Wet Ingredients

  • 6 TBLS Unsweetened Applesauce

  • 1 Tsp Vanilla Extract

  • ½ Tsp Apple Cider Vinegar

  • 1 Cup Water

Alternatives

  • Change it up by adding nuts (this will lose the low-fat status)

  • Add dried fruit to make it a faux fruit cake

Preparation

Preheat Oven to 350 degrees

  1. Line a 7”x11” glass baking pan with parchment paper and set aside

  2. In a large mixing bowl, combine the flour, Splenda, cocoa powder, baking soda and salt. Mix well

  3. Add the vanilla extract, apple cider vinegar, and unsweetened applesauce. Mix well

  4. Add the water to the mixture and stir until fully combined

  5. Transfer the mixture to the lined baking pan

  6. Bake uncovered at 350 degrees for 25 to 30 minutes, or until a toothpick comes out clean - DO NOT OVER BAKE

  1. Remove from the oven and let cool in the baking pan for 10 minutes

  2. Carefully transfer to a wire rack to completely cool

  3. Once cool, remove the brownie cake from the parchment paper and place back in the cooled glass baking dish

Storage

  • Seal in an airtight container - Our glass baking dish comes with an airtight lid. We keep the sealed baking dish on the counter for quick access.

  • Place a dry paper towel on the brownies to help manage moisture
